I am a chef at a large university and we must cater to all special diets. We have one student starting in the Fall that cannot eat protein. If she eats protein, it will start to effect her brain and her mother says if this happens it is irreversible. Can you tell me what this medical problem is called and what kind of diet is appropriate for her? Thank You.

Well I certainly can't. The brain needs protein from food.

OK...So I found out what this disorder is called. PKU...Phenylketonuria. It is an inherited metabolic disease that is passed on by the parents. Both parents must possess the gene in order to pass it on to the child.
